Pasta, in general, is one of the most used ingredients when it comes to cooking, it is cheap, it cooks fast-it cooks in half the time of rice or less-it is clean -not to peel or chop it like potatoes – it combines with almost anything that we have in the pantry and it is practically impossible that a rich dish does not come out even if the cook is a complete beginner. Although the pasta is really pure carbohydrates, there is no reason to eliminate them completely. Carbohydrates are still an important part of a balanced diet in addition to providing great energy to the body, as long as we consume the right portion mixed with the right ingredients. If you want to continue enjoying one of your favorite dishes, that’s good to start with these healthy pasta recipes.
1. Spinach Pasta
Simply put the pasta in boiling water, when you finish you reserve 1/2 cup of pasta water and the rest drain it. In another pan, add 2 teaspoons of olive oil and 1 clove of chopped garlic. Wait for them to brown over medium heat and add the pasta and spinach, stirring until the spinach looks hydrated. When it dries completely like noodles add the cup of water that you had saved, wait for it to be absorbed and served immediately.
2. Vegetable Pasta
In a large pot, add water, pasta, and different vegetables. You can add broccoli, pepper, asparagus, arugula, onion, and pumpkin. Boil all the ingredients in water with salt, pepper and three tablespoons of white wine. When the water starts to boil, cover the pot and wait 10 minutes until the pasta is al dente. Do not overcook the pasta, there should be some water leftover but you can serve it without needing to drain. Add a bit of Parmesan cheese and enjoy.
3. Cauliflower Alfredo Pasta
Are you looking for a healthier version of your alfredo pasta? Well, here I leave it! For the sauce, you simply have to brown garlic onions in a pan, this will give much more flavor to the sauce. Wait until they are perfectly brown if you wish you can add 1 tablespoon of organic butter. Once ready, in a chicken, cook the cauliflower with 5 cups of chicken broth for 7 minutes. Since it is soft add to the blender along with the garlic and onion, 1/2 cup of unflavored almond milk, 1/2 cup of chicken broth, salt, and pepper. Add to your pasta preferably and if you want you can add a roasted chicken breast on top. Enjoy!
4. Creamy Zucchini Pasta
This pasta is 100% vegetarian and 100% delicious. Simply put an avocado, basil leaves, a clove of garlic, a tablespoon of olive oil and the juice of a lemon in a processor. Turn on the processor. For pasta, you can boil regular pasta and mix, but I recommend making pumpkin strips (zucchini) and boiling them to make vegetable pasta. You can boil them until the color changes from white to green. Mix the ingredients and go.
