CHICKEN BURGERS WITH VEGETABLE SAUCE

INGREDIENTS: • 2 tomatoes • 1 Italian pepper • Onion • 1 cucumber • olive oil • 50 ml apple cider vinegar • Salt • Pepper

PREPARATION:

  • Peel and remove the germ from the garlic. Arrange them in a mortar with the parsley, mash and add the lemon juice and oil. Mix well and season with salt. Brush the chicken with this sauce and let rest 20 minutes in the refrigerator.
  • Wash and finely chop tomatoes and pepper. Peel and finely chop the onion and cucumber. Arrange these ingredients in a bowl mix well and add the oil, vinegar, and salt. Mix again. Wash and drain the lettuce well.
  • Remove the chicken from the marinade, heat a pan to the fire, add the chicken fillets and do it on both sides. Assemble the burgers with the lettuce, the chopped vegetables, the chicken fillets, and the hamburger bun. Serve with salad and some fried potatoes and accompany with mayonnaise sauce, ketchup or mustard to taste.

CRISPY CHICKEN IN SALAD

INGREDIENTS: • 300 g of chicken breast • 1 clove of garlic • 1 branch of parsley • 1/2 lemon • 50 ml of extra virgin olive oil • 2 eggs • 50 g of bread crumbs • 100 g of soft mustard • 50 ml of flower honey • 4 sweet and sour pickled gherkins • 100 g of mixed lettuce • 2 tomatoes • salt • pepper

Crispy Chicken in Salad

PREPARATION:

  • Mash the garlic clove peeled and without the germ together with the parsley, season and add the lemon juice. Remove the possible bones or bones from the chicken and cut into wide strips. Mix with mortar and store for ten minutes in the refrigerator.
  • Heat a large pan with olive oil. Pass the chicken strips lightly drained by egg and bread crumbs and fry until golden brown. Take out on absorbent paper and reserve.
  • Mix the honey with the mustard until you get a homogeneous and smooth sauce. Wash and drain the lettuce leaves well. Wash and dice the tomatoes. Chop pickles thoroughly. To mount the salad with a base of lettuce, tomato, and gherkins, to crown with the fried chicken and to serve accompanied by the sauce of mustard and honey.

ROAST CHICKEN WITH VEGETABLES AND YOGURT SAUCE

INGREDIENTS: • 100 g of onion • 100 g of red pepper • 100 g of eggplant • 100 g of zucchini • 2 yogurts • 100 ml of extra virgin olive oil • 1 tablespoon of cumin seeds • 2 tablespoons of soy sauce • Salt pepper

PREPARATION:

  • Peel and chop the vegetables. Put a pan on the fire with the oil, add the vegetables and stew slowly. When they are tender, add soy sauce and mashed cumin. Mix well and remove from heat. Grind the vegetables until a homogeneous puree is obtained. Reserve two tablespoons of the mixture for the yogurt sauce.
  • Open the chicken breasts to fill them. Spread and spread with the cream of vegetables, return to its original shape and close with a skewer. Put them in a baking dish, water, and roast for 30 minutes. Remove from the oven and reserve covered.
  • Mix the yogurts with the vegetable cream and salt and pepper. Serve the roasted chicken with this sauce.

CHICKEN AND CHEESE CURLS WITH MUSHROOMS

INGREDIENTS: 4 chicken breasts • 4 slices of ham York • 150 gr of Provolone cheese • parsley • basil • 150 gr of mushrooms • 1 onion • 4 slices of bacon • oil • salt

Chicken and Cheese Curls with Mushrooms

PREPARATION:

  • Ask to cut the breasts in the form of a book, to fill them. Season the meat. Place on each breast 1 slice of ham, cheese in pieces and herbs. Roll the breasts in the shape of a curl, tie them and brown them in oil. Remove and place them in a fountain. Bake in medium oven 10 minutes. Meanwhile, peel the onion and cut it into julienne. Clean and cut the mushrooms into slices. In a pan, fry the onion. When tender, add the mushroom and bacon cut into pieces. Add salt to taste and sauté. Serve the curls with the mushroom.
