Dinner time can be the most complicated of all meals. Not only because we tired and have very little time, but also we do not want to spend it on making elaborate meals that give us a lot of work.  Therefore, in order not to end up asking for dinner every night, we bring you a series of quick and easy dinner recipes, that will not take much time and that will help you to vary while having a light dinner. Our selection includes all kinds of recipes and options.

Fish Soup with Prawns

This is one of those dishes that fell good on cold days/nights.

Ingredients:

  • 1 kg of rock fish for soup
  • 1/2 kg mussels
  • 1/4 kg clams
  • 20 prawns
  • 2 large onions
  • 4 ripe tomatoes
  • 2 celery sticks
  • 2 carrots
  • parsley
  • 1 teaspoon sweet paprika
  • Salt
  • olive oil
  • noodles (the thickness to the taste of each one, we can also make it with rice)
  • 2 1/2 liters water

How to Prepare:

Step 1: We will clean well all the fish that we will use for our soup. We will peel the prawns and reserve them separately; we will only use the heads and skins to make the broth of our soup.

Step 2: In a pot, we put the two and a half liters of water and all the fish, mussels, clams, and shrimp waste. We add 2 tomatoes, 1 onion and part of the parsley. Let them boil until our broth is consumed halfway.

Step 3: In a pan we’ll add a little oil and fry the other onion and cut the 2 remaining tomatoes. We will also add a teaspoon of sweet paprika (without letting it burn because it would bitter).

Step 4: Now, we’ll mix our broth and reserve the mussels and clams for when we make the soup.

Step 5: For our soup, we put in a pot 1 liter of the fish stock we add the shelled mussels and the clams when it starts to boil we will add the noodles and prawns that we had reserved and wait for everything to be done to serve our soup. At the time of serving, we can put over a bit of chopped parsley.

Stuffed Egg Muffins

Eggs are the only ingredient needed to prepare this recipe. The rest will depend on what you have at the moment in the fridge.

Ingredients:

  • Eggs
  • Olive oil and Salt

How to Prepare:

Step 1: First of all, we’ll preheat the oven to 190º C with heat up and down while we choose our ingredients. We spread the hollows of the mold of muffins or muffins that we have and reserve with olive oil.

Step 3: Now for each egg that we bat in a bowl and will add a little of the ingredient that we have chosen with a pinch of salt. Do not go over the quantities do not go to overflow in the oven.

Step 4: When we have the entire mold ready we put it in the oven for 20 minutes. Afterward, let cool a little, unmold and ready to eat!
